Based on a cheese now rarely found in Australia, Sage Derby has aslightly less moisture than a cheddar. The curd is generously mixed with crushed sage leaves, a tradition once thought to hold great medicinal qualities. The cheese is matured for up to six months, allowing some of the acidity in the younger cheeses to develop into smoother flavours.
The cheese works remarkably well with pears on a fruit platter. Our favourite though is to melt it on toast and top it with a poached egg. We recommend that you try the cheese with either an ale, which balances the herbal overtones of the sage, or a sweet reisling which accentuates it,
