This cheese is the perfect companion to some of the big Australian red wines. Its popularity suggests that it can certainly hold its own! Using handmade cheddar as its base, the addition of cracked and whole peppercorns make this cheese a magnificent accompaniment to deep, complex wines.
This cheese provides a lovely peppery undertone to accompany food. It is particularly good as thinly shaved pieces on fresh bread with salami. With wines, its pretty hard to go past a deep, smooth Cab sav. However, a well matured lighter red, such as a pinot Noir, is also well suited.
