Maffra Wensleydale

Based on a recipe which can be traced back to the 11th century, Wensleydale has a moist yet crumbly texture. As it is eaten young, there is a distinctive acidity to the flavor. This gives the cheese a particularly refreshing quality which is wonderfully complemented by its underlying creaminess on the palate.
Famous as an accompaniment to apple pie, although any sweet fruits work well. Wash down with cider or a sweet dessert wine or even a sparkling wine, the cheese leaves a refreshingly sweet
aftertaste.
